spinach salad with shrimp/warm bacon vinigrette

Spinach Salad with Warm bacon vinagrette dressing

1 bag of baby spinach
1 bag of frozen shrimp
1 red onion
1 tomato
3 slices of thick bacon crumbled (save the bacon grease)
2 clove of crushed garlic

Warm Bacon Vinigrette

Bacon Grease left over from cooked bacon (3 tablespoons approximately)
3 tablespoons of olive oil
2 tablespoons of apple cider vinager
1 table spoon of brown sugar
tablespoon of dijon mustard
2 cloves of crushed garlic
salt and Pepper

Wash and dry your spinach and put aside. Slice and Dice your onions and tomato
s. Mix well and set aside. In one pan put melt 2 tablespoons of butter and add the garlic! Do not over cook garlic by keeping your heat on low! Add Shrimp and cook until warmed thoroughly!
Drain and Set aside. Next cook your bacon when done crumble bacon and set aside.

In a bowl add bacon grease, apple cider, sugar, mustard garlic. Slowly whisk in the olive oil until the mixture emulsifies! Salt and pepper to taste

Assemble salad by putting spinach, tomato, shrimp and bacon on top and pouring warm bacon vinigrette over top

  6. oh yum -- sounds really good! I've just "discovered" that I love spinach, after swearing forever that I hated it. I do hate cooked spinach, but fresh -- especially from the garden -- oh yum!
