There are some repeats on my menu plan this week because my mother has brought several things over for me to cook. I don't mind because it actually saves money on groceries.
Monday: Shepards Pie
Tuesday: Crock Pot Country Style Ribs
Wednesday: Lemon Pepper Pan Fried Tilapia and Veggies
Thursday patty melt burger
Friday: not sure.

Speaking of memorial day and Bbq, Here is my recipe for bbq baked beans!
BBQ Baked Beans4 cans of pork and beans
1 lb bacon
1 onion diced
1 bell pepper diced
1/2 cup of brown sugar
1/2 bottle of BBQ sauce
In a frying pan, fry the bacon until cooked, remove bacon(crumble) and reserve about 2 T of bacon grease.
in the reserved 2 Tablespoons of bacon grease saute onions and bell pepper until soft. In a large pan empty cans of baked beans. Next add cooked bacon, peppers and onions, mustard, brown sugar bbq sauce (add more or less to taste) and brown sugar (add more or less to taste. Warm until everything is mixed together and and beans are warm. Preheat oven 350 degrees. Pour baked beans in a 9x13 pan cover with foil and bake for about 45 minutes to an hour.
