Menu Plan Monday and Planning Backyard Party and Baked Beans Recipe

There are some repeats on my menu plan this week because my mother has brought several things over for me to cook. I don't mind because it actually saves money on groceries.

Monday: Shepards Pie
Tuesday: Crock Pot Country Style Ribs
Wednesday: Lemon Pepper Pan Fried Tilapia and Veggies
Thursday patty melt burger
Friday: not sure.

I know memorial day is coming up and that is usually the kick off to summer entertaining. Well you might want to check out this great american bbq blog hop for that gives you ideas for summer enteraintment! Lots of good information. Here are a list of the those involved.

Speaking of memorial day and Bbq, Here is  my recipe for bbq baked beans!

BBQ Baked Beans

4 cans of pork and beans
1 lb bacon
1 onion diced
1 bell pepper diced
1/2 cup of brown sugar
1/2  bottle of BBQ sauce
1Tbs Mustard
In a frying pan, fry the bacon until cooked,  remove bacon(crumble)  and reserve about 2 T of bacon grease.
in the reserved 2 Tablespoons of bacon grease  saute onions and bell pepper until soft. In a large pan empty cans of baked beans. Next add cooked bacon, peppers and onions, mustard,  brown sugar bbq sauce (add more or less to taste) and brown sugar (add more or less to taste. Warm until everything is mixed together and and beans are warm.  Preheat oven 350 degrees. Pour baked beans in a 9x13 pan cover with foil and bake for about 45 minutes to an hour.
