Homemade Churro’s

Hope everyone had a wonderful weekend. We did, for one weekend, we did not have to be there or do anything. My only issue was it rained and the yard work that badly needed to get done did not. Oh well what can I do. My husband made the best grilled pork chops. He marinated them in hard cider and grilled them, all I can say is yum!
Saturday, I was getting hungry for something sweet and did not know what I wanted so I came across a recipe for homemade churro's , which I never made before, and all I am going to say is this is a gotta make recipe.  They are so good, and rival anything you get in a restaurant.

Homemade Churro's

1 cup of water
1/2 cup butter
1/2 t vanilla extract
2T sugar
1/4 t salt
1 cup of flour
3 eggs
oil for frying
For Coating
1/2 cup sugar
1/2 cup brown sugar
1/4 t salt
1 teaspoon of cinnamon
In a shallow dish, mix all ingredients for coating and set aside.
In a saucepan over medium heat, add the water, butter, sugar, salt and vanilla and stir until butter is melted and everything is combined. Sift in flour until dough ball forms and remove from heat. Place dough in a mixing bowl fitted with a paddle and allow to cool for 5 minutes.
While  dough is cooling set a heavy bottom pan filled with 2 inches of oil over medium high heat.
using the paddle attachment of the mixer, beat in the eggs one at a time to the dough. Scoop batter into a large piping bag fitted with a large star tip
when oil is hot pipe churros into oil, make any size lengths you like. Try keeping it to only four per batch. cook until golden brown on each side approximately 60 to 90 seconds per side. Drain on paper towels and dip into coating mixture. repeat process until all batter has been used
