South Western Sausage and Green Chili Quiche
1 lbs. sausage
2 onions sliced
1 cup of pepper jack cheese shredded
1 Tbsp. of butter
2 Tbsp. of olive oil
1 tsp. of salt
1/4 tsp. of pepper
1/2 tsp. of cumin
1 small can of green chilies
1 store bought or homemade pie crust.
Preheat oven to 375 degrees. Put pie shell into a 9 inch pie plate and set aside.
In a sauté pan fry up sausage until cooked thoroughly. Drain grease and set aside sausage. In same pan using the butter and olive oil, sauté
onions until tender approximately 5 minute and set aside to cool for about 5 minutes. In a bowl mix eggs, salt, pepper, cumin and green chili's then add cooled sausage and onions
Pour into a 9 inch pie pan that has been covered with unbaked pie shell. Bake in oven for approximately 1 hr. or until the center comes out clean when you check it with a knife.
